INGREDIENTS:
1 package of Pad Thai Noodles ( I like using Butterfly Brand Pad Thai Noodle)
Peanut Sauce (courtesy of my mom! Thanks mom!):
1/2 cup natural creamy peanut butter
1/4 cup chicken broth
3 tablespoons low sodium soy sauce
1 1/2 tablespoon brown sugar
1 1/2 tablespoon ginger
2 tablespoons lime juice
1/2 teaspoon of chili flakes
1 teaspoon red curry paste
Sliced green onions - for garnish
Sesame seeds - for garnish
Peanuts -for garnish
Bean sprouts - for garnish
Instructions
1. In a medium sauce pan, soak noodles in warm water for 15 minutes.
2. Drain the noodles, leaving just a little water at the bottom of the pan
3. Mix ingredients for peanut sauce together in food processor or a blender. You want the sauce to be smooth and creamy.
4.. Add two tablespoons of oil to the pan, and bring to a simmer over medium-low heat. Stir and gradually add in peanut sauce (save a little to add over top once you're finished!).
5.. Cook until noodles are soft, then serve!
Notes
- Add veggies to your bowl! We had snap peas and they were delicious. Next time we will add carrots too!
-Add in fried or scrambled egg.
