INGREDIENTS
2 salmon fillets skin on
1/3 cup teriyaki sauce
1/2 teaspoon ginger
1/4 cup pineapple juice or pineapple jam
6 pineapples slices
1 teaspoon honey
1/4 cup brown sugar
2 cloves garlic- minced
1 tablespoon rice wine vinegar
sliced green onions - for garnish
sesame seeds - for garnish
Instructions
Spray pan with cooking spray
Once the pan is hot, place the fillets in the pan, skin side down and heat for 5 minutes until the skin is crispy.
Turn fillets over and cook for another 5 minutes until the fish is fully cooked.
In a separate bowl whisk together all ingredients (except for garnish).
Pour the sauce on the salmon fillets (save one tablespoon for glazing after) and cook for another two minute until sauce is crispy on the fish.
Remove fillets, and put pineapples slices in the pan.
Cook pineapple slices in the remaining sauce until caramelized.
Serve with brown rice and top with caramelized pineapple.
