Soft Peanut Butter Cookies with Chocolate Chips

  • 3/4 cup smooth peanut butter

  • 3/4 cup unsalted butter room - melted

  • 1 cup sugar

  • 1 cup brown sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 3 cups all purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup chocolate chips

INSTRUCTIONS

  1. Preheat oven to 350 degrees F and line baking sheets with parchment paper.

  2. Melt butter in a bowl for 30 seconds.

  3. In a standing mixer beat peanut butter and butter until smooth.

  4. Add sugars and beat on high speed until fluffy

  5. Add eggs and vanilla - beat on low speed until combined.

  6. Add flour, baking soda and salt continue to beat on a low speed.

  7. Mix in chocolate chips

  8. Scoop cookie dough onto baking sheets - I use a cookie scoop to get the perfect size!

  9. Bake for 10-12 minutes, or the bottoms have a golden brown touch to them.

Notes:

-If you have Hersey Kisses, you can substitute that for chocolate chips and place those on top AFTER you bake. Place those once the cookies are out of the oven and push into the cookie so once it cools the Hersey Kiss stays in place.

-Or leave out the chocolate all together! They're still very delicious!
