Slow Cooker Carnitas

INGREDIENTS:

  • 1-2 lbs pork (shoulder / butt)

  • 1 tablespoon olive oil

  • 1/4 cup orange juice - I prefer freshly squeezed oranges only

  • 2 tablespoons lime juice (1 lime)

  • 1 teaspoons liquid smoke

  • 2 bay leaves (do not eat! throw them out after everything is cooked)

  • 1 onion - chopped

Wet Spice Rub

  • 4 tablespoons olive oil

  • 3 tablespoons tomato paste

  • 1 tablespoon soy sauce

  • 1/4 cup brown sugar

  • 1 tablespoon cumin

  • 2 teaspoons dried oregano

  • 1 teaspoon salt

  • 1 teaspoon chili pwdr

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon smoked paprika

Instructions -

  1. Ensure the pork is taken out of the freezer, and defrosted.

  2. Heat 1 tablespoon olive oil over high heat in a large skillet. Sear pork on all sides until lightly browned (I like mine a little crunchier, so I go until a crispy brown). Transfer pork to cutting board and slice once cooled.

  3. In a separate bowl whisk together all of the wet spice rub ingredients. Place pork in the bowl, and toss around until coated.

  4. Add orange juice, lime juice, liquid smoke, onion and 2 bay leaves to slow cooker. Depecning upon when you're eating cook on low for 8 to 10 hours or on high for 4 hours

  5. Just before you serve, shred the pork and mix around the flavors!

  6. Serve warm in tortillas, on rice, with beans and cheese or with favorite toppings!
