Rice Pudding

INGREDIENTS

  • 3/4 cup uncooked Jasmine rice (or white rice).

  • 3 cups milk - divided

  • 1/2 cup granulated sugar

  • 1/4 teaspoon salt

  • 1 egg, whisked

  • 1 tablespoon unsalted butter

  • 2 teaspoon vanilla extract




Instructions

  1. Bring 1 1/2 cups water to a boil in a saucepan; stir rice into boiling water. Simmer until rice puffs up.

  2. Once cooked add 2 1/2 cups milk, sugar and salt.

  3. Cook over medium heat until thick, about 15 minutes. Stir in remaining 1/2 cup milk, whisked egg and cook 2-3 minutes longer continue to stir.

  4. Remove from heat, stir in butter and vanilla.

Notes

-Add toppings such as: cinnamon, chocolate chips, or nuts.

-Add in cocoa if you rather have chocolate rice pudding!
