INGREDIENTS:
3/4 cup butter (12 tablespoons) - softened
1/2 cup granulated sugar
1/2 cup light brown sugar
1 egg
2 teaspoon vanilla
2 ripe bananas - mashed
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup oats
1 cup chocolate chips
1 cup walnuts (optional)
INSTRUCTIONS
Preheat oven to 350° and line a couple of baking sheets with parchment paper.
In a standard mixer, add all the ingredients (except chocolate chips & oats) and mix until smooth.
Once mixed, fold in oats & chocolate chips.
Use a cookie scoop to evenly disturb dough on a cookie sheet. Make sure dough is 1-2 inches apart.
Bake for 12 minutes, or until the bottoms are golden brown!
Notes
- These cookies are meant to be soft and gooey, do not over cook them. Cook them based on the bottoms. Once they are golden, they are done!
- I added walnuts to some of the cookies, gives it a crunch! Plus I love a sweet & salty cookie.
