PREP TIME: 20 MINUTES

COOK TIME: 12 MINUTES

RESTING TIME: 10 MINUTES

TOTAL TIME: 42 MINUTES

SERVING: 32

INGREDIENTS:

  • 3/4 cup butter (12 tablespoons) - softened

  • 1/2 cup granulated sugar

  • 1/2 cup light brown sugar

  • 1 egg

  • 2 teaspoon vanilla

  • 2 ripe bananas - mashed

  • 2 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1 teaspoon baking soda

  • 1/2 teaspoon cinnamon

  • 1 cup oats

  • 1 cup chocolate chips

  • 1 cup walnuts (optional)

INSTRUCTIONS

  1. Preheat oven to 350° and line a couple of baking sheets with parchment paper.

  2. In a standard mixer, add all the ingredients (except chocolate chips & oats) and mix until smooth.

  3. Once mixed, fold in oats & chocolate chips.

  4. Use a cookie scoop to evenly disturb dough on a cookie sheet. Make sure dough is 1-2 inches apart.

  5. Bake for 12 minutes, or until the bottoms are golden brown!

Notes

- These cookies are meant to be soft and gooey, do not over cook them. Cook them based on the bottoms. Once they are golden, they are done!

- I added walnuts to some of the cookies, gives it a crunch! Plus I love a sweet & salty cookie.
