INGREDIENTS:
2 pounds ground beef or turkey
1 tablespoon olive oil (for ground turkey)
1/2 onion - chopped
1 egg
1/2 cup Panko bread crumbs
1/2 cup fresh grated parmesan cheese
1/4 cup Italian seasoning
1/2 pound fresh mozzarella - cut into small cubes
Preheat oven to 400.
Cut mozzarella into small cubes - set aside for later
Mix together meat, olive oil (only for ground turkey), chopped onion, egg, bread crumbs, parmesan cheese, and Italian seasoning. Mix until combined.
Divide meat into 6 -8 large pieces (or smaller, depending how many you would like to make).
Flatten the piece and add a cube of cheese. Roll into a ball, and make sure cheese is completely covered
Place a piece of parchment paper on a baking pan.
Bake 30 minutes (cheese will ooze out and that's okay!)
Remove meatballs from the oven and pour sauce over top.
Serve on pasta if deserved or eat alone with some veggies!
