Mahi Mahi with Mango Jalapeño Salsa

INGREDIENTS:


FOR FISH

  • 4 mahi-mahi filets (or salmon, or chicken)

  • 2 tablespoons extra virgin olive oil

  • 1/2 tablespoon cumin

  • 1/2 teaspoon onion powder

  • 1 teaspoon chili powder

  • 1/4 teaspoon sea salt

  • 1 1/2 cups brown rice

FOR SALSA

  • 1 cup mango, diced (about 1 - 2 mangos)

  • 1/3 cup cherry tomatoes, diced

  • 1/4 cup cucumber, diced (half a cucumber)

  • 2 tablespoons cilantro, finely chopped

  • 1 tablespoon lime juice

  • 1/2 a jalapeño, minced -Optional

  • Sea salt, to taste


Instructions

1. Preheat grill to medium heat. Set mahi-mahi filets on a plate and drizzle with olive oil. Rub to coat.

2. Mix together cumin, chili powder, onion powder and sea salt. Rub over each filet.

3. Cook brown rice 5-10 minutes

4. Combine ingredients for salsa in a small bowl. Refrigerate until serving.

5. Place mahi-mahi on grill. Cook 3-4 minutes, then gently turn over and cook 3-4 minutes longer.

6. Serve mahi-mahi with salsa & brown rice.


Notes

- If you don't eat fish, you can substitute with chicken

- You can substitute the rub for Old Bay - tastes just as great!
