INGREDIENTS:
1 package of spaghetti noodles
1lb baby scallops
Lemon olive oil (or lemon juice + olive oil)
2 -3 cloves garlic
Sauce -
1 cup heavy cream
2 tablespoons mascarpone
1/4 cup parmesan plus more for topping
2 tablespoons flour
1 teaspoon oregeno
1 teaspoon parsley
1/2 package of mushrooms (optional)
Instructions
Bring a pot of water to a boil. Add noodles and cook according to package instructions. Drain and set aside.
Melt lemon olive oil in a pan over medium heat. Add garlic and saute for 30 seconds.
In a separate sauce pan add the rest of the ingredients for the sauce to the pan and whisk constantly until smooth and bubbly.
Drain spaghetti and pour the sauce over top.
Sprinkle scallops over the noodles (more mix with pasta and sauce if preferred).
Top with more parmesan, if desired.
Notes
- Substitute scallops with shrimp or chicken!
- An Alfredo sauce can be substituted for the sauce
