12 lasagna noodles - cooked according to package
1 1/2 cups shredded mozzarella cheese - for topping
1lb of ground meat (beef, or turkey)
1 jar of tomato sauce (we use meat sauce from Ragu)
1 teaspoon garlic powder
1 teaspoon onion powder
For the ricotta mix
15 ounces ricotta cheese
1 egg
1/2 cup parmesan cheese - shredded
1/2 cup mozzarella cheese - shredded
1 teaspoon Italian seasoning
Dash of salt
Dash of pepper
Combine all the ingredients for the ricotta mixture in a large bowl, then stir until smooth. Set aside
Heat 1 teaspoon of olive oil in a large pan over medium high heat. Add meat, onion & garlic. Cook until brown.
Ensure meat is cooked, and broken into small pieces.
Pour about 1/2 - 1 cup of pasta sauce in the meat mixture.
Cook noodles according to directions on the box.
Drain noodles and rinse with cool water.
Remove meat sauce from heat and set aside.
Once noodles are chilled. Lay the lasagna noodles out on a flat surface. Spread a layer of ricotta mixture over each noodle.
Spread meat sauce over top of ricotta mixture.
Roll up each noodle, then arrange them in the baking dish. Spoon the reserved sauce over the top and sprinkle with mozzarella cheese.
Bake uncovered for 30 minutes until cheese is melted (and there is a crunchy top!) and starting to brown. Sprinkle with parmesan and top with extra sauce, then serve warm.
