Huli Huli Shrimp

INGREDIENTS:

  • 1 - 2lbs of shrimp

  • 1 cup rice

  • 1 can pineapples

  • 1 cup pineapple juice

  • 1/3 cup soy sauce

  • 1/3 cup brown sugar

  • 4 tablespoons rice vinegar

  • 1/3 cup ketchup

  • 1 teaspoon fresh garlic

  • 1 teaspoon ginger

  • 2 teaspoons sesame oil

  • 2 teaspoons Dijon mustard

Instructions

  1. Mix together all ingredients in a medium bowl.

  2. Put shrimp in the marinade and in the fridge for 30 minutes to 1 hour (or even over night).

  3. Place shrimp in a pan (or on the grill) over medium heat. Cook on each side, turning several times and brushing shrimp with marinade after each turn. Cook until crispy!

  4. In a separate pan (or on the grill) cook pineapple until it's cooked, add a little sauce to make it more flavorful.

  5. Serve with rice.


Notes:

- Exchange shrimp for chicken or other protein.
