Creamy Spinach and Mushroom Tortellini with Caramelized Onions

INGREDIENTS:

  • 1-2 packages of tortellini (depending upon how hungry you are!)

Caramelized Onions -

  • 2 tablespoons olive oil

  • 1 yellow onions large

  • 1/4 teaspoon salt

Cream Sauce -

  • 1 tablespoon olive oil

  • 1 package mushrooms

  • 1 bunch of fresh spinach

  • 1 cup heavy cream

  • 1/4 teaspoon salt

  • 1/2 cup parmesan

  • 1/2 teaspoon oregano

  • 1 teaspoon parsley

  • 1/4 teaspoon black pepper when serving


Instructions

  1. Cook tortellini according to package instructions.   

  2. Peel onion, wash and thinly slice.

  3. Heat 2 tablespoons olive oil on medium-high heat in a pan. Add sliced onions & sliced mushrooms and cook on high for about 10 minutes, constantly stirring with the spatula.

  4. Reduce heat to medium and continue cooking the onions until they are browning, continue to stir.

Creamy Sauce-

  1. Add sauce ingredients to a separate pan and immediately reduce to simmer.  Keep stirring while the sauce simmers for a couple of minutes. 

  2. Cook until spinach has reduced, once the spinach has cooked all the way, you're almost done!

  3. Add onions and mushrooms, and stir for a few minutes.


  1. Add cooked and drained tortellini to the creamy sauce and serve warm!


Notes

- Add a protein if you would like!

- Alfredo sauce can be a good substitute, but keep cook the spinach, onions and mushrooms together and add the Alfredo sauce to heat it up together.
