Copy Cat Cheesecake Factory Lettuce Wraps

SERVING: 6 - 8 lettuce wraps

Chicken + marinade

  • 1 package chicken tenderloins

  • 1 can coconut milk

  • 1/3 cup fresh lime juice or 4 limes

  • 1 tablespoon olive oil

  • 1 tablespoon cilantro

  • 1 teaspoon garlic powder

  • 1/2 teaspoon red pepper flakes,

Peanut sauce

  • 1/2 cup peanut butter

  • 1 tablespoon + 1 teaspoon sesame oil

  • 1/4 cup soy sauce

  • 1/4 cup lime juice or 2 limes

  • 1 1/2 teaspoons garlic powder

  • 1 tablespoon + 1 teaspoon honey

Cucumber salad

  • 1 English Cucumber - thinly sliced

  • 2 1/2 tablespoons rice wine vinegar

  • 1 tsp sesame oil

  • 1/4 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 tsp sesame seeds

Optional toppings -

  • 1 head butter lettuce

  • Shredded carrots

  • Fresh cilantro

  • Sesame seeds

  • Asian cucumber salad


INSTRUCTIONS Chicken

  1. Mix together all marinade ingredients and marinate chicken for at least 30 minutes.

  2. Cut chicken into thing strips

  3. Grill chicken until desired cooked all the way through. I like mine crispy

Peanut sauce

  1. Start this while the chicken is marinating.

  2. Whisk all peanut sauce ingredients until well combined.

Asian Cucumber Salad

  1. Slice cucumbers very thin

  2. Add vinegar, sesame oil, sesame seeds, salt and pepper and mix

Assembly

  1. Place chicken pieces onto lettuce wraps.

  2. Top with asian cucumber salad, shredded carrots and fresh cilantro.

  3. Drizzle with peanut sauce and sprinkle with sesame seeds.
