Chocolate Chip Pumpkin Muffins with Cream Cheese Frosting

INGREDIENTS:

  • 1 cup granulated sugar

  • 1 2/3 cup all-purpose flour

  • 1 tablespoon pumpkin pie spice

  • 1 teaspoon baking soda

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon. salt

  • 2 eggs

  • 1/2 cup (1 stick) unsalted butter, melted

  • 1 cup 100% pumpkin puree

  • 1 cup semi-sweet chocolate chips

Frosting

  • 1/2 cup butter (softened)

  • 5 ounces cream cheese

  • 3 cups powdered sugar

  • 1/2 teaspoon vanilla

  • 1/4 cup half and half cream

INSTRUCTIONS: Muffins-

  1. Combine all ingredients for the muffins in a large bowl stir until just combined. Gently stir in chocolate chips.

  2. Spoon batter into muffin cups - grease if not using muffin cups

  3. Bake at 350℉ for 20-25 minutes until you stick a tooth pick into the middle and it comes out clean. Cool in pan for about 20-30 minutes, or until completely cool before frosting.

Frosting-

  1. In a medium bowl beat together butter and cream cheese on medium-high speed until creamy approximately 1 minute. Lower speed to medium and add powdered sugar, 1 cup at a time, beat well after each addition. Add salt, half and half and vanilla and beat until fluffy, about 3 minutes.


Notes

- Add pecans or walnuts if you want a little crunch!

-Frosting isn't needed, but who doesn't want cream cheese frosting!?!?!?
