INGREDIENTS:
1 cup granulated sugar
1 2/3 cup all-purpose flour
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon. salt
2 eggs
1/2 cup (1 stick) unsalted butter, melted
1 cup 100% pumpkin puree
1 cup semi-sweet chocolate chips
Frosting
1/2 cup butter (softened)
5 ounces cream cheese
3 cups powdered sugar
1/2 teaspoon vanilla
1/4 cup half and half cream
INSTRUCTIONS: Muffins-
Combine all ingredients for the muffins in a large bowl stir until just combined. Gently stir in chocolate chips.
Spoon batter into muffin cups - grease if not using muffin cups
Bake at 350℉ for 20-25 minutes until you stick a tooth pick into the middle and it comes out clean. Cool in pan for about 20-30 minutes, or until completely cool before frosting.
Frosting-
In a medium bowl beat together butter and cream cheese on medium-high speed until creamy approximately 1 minute. Lower speed to medium and add powdered sugar, 1 cup at a time, beat well after each addition. Add salt, half and half and vanilla and beat until fluffy, about 3 minutes.
Notes
- Add pecans or walnuts if you want a little crunch!
-Frosting isn't needed, but who doesn't want cream cheese frosting!?!?!?
