Blueberry & Rosemary Sweet Rolls

INGREDIENTS Dough -

  • 2/3 cup milk -warm

  • 1 package active dry yeast

  • 1/3 cup + 1/2 teaspoon sugar - divided

  • 3 tablespoons unsalted butter - softened

  • 1/2 teaspoon salt

  • 1 egg

  • 3 - 3 1/4 cups all-purpose flour plus more for dusting

Filling-

  • 8 tablespoons unsalted butter - softened

  • 1 cup granulated sugar

  • 4 tablespoons all-purpose flour

  • 1/ 4 teaspoon salt

Optional Add-Ins:

  • 1 cup fresh or frozen Blueberries (or Chocolate Chips!)

  • 1 tablespoon Rosemary

  • 1/2 cup jam

  • 1 cup Strawberries, or Mango

  • 1 cup Nutella

Frosting -

  • 2 tablespoons butter - melted

  • 2 ounces cream cheese very soft

  • 1 1/2 cups powdered sugar

  • 1/4 teaspoon salt


INSTRUCTIONS

Dough -

  1. Place milk in a microwave safe measuring cup. Heat for 45 seconds. Add yeast and 1/2 teaspoon sugar and stir.

  2. Put sugar, butter, salt, and egg in the bowl of a stand mixer with the paddle attachment. Mix until the smooth (it's fine if it's a little chunky). Pour in milk/yeast mixture and stir.

  3. Add 3 cups flour and stir in stand mixer. Then replace the paddle with the dough hook. Continue mixing on low speed until the dough forms a ball. If it’s still wet, add a little flour, but no more than 1/4 cup.

  4. Spray a large bowl with cooking spray and place the dough in it. Cover and let sit for 2-4 hours until it doubles in size.


Filling-

  1. Stir together butter, sugar, salt and flour.

  2. After dough has risen, roll it out on a lightly floured surface. Spread the filling as evenly as possible. Sprinkle with blueberries (or chocolate chips!).

  3. Roll the dough tightly, and slice it into 12 equal rounds in a sprayed baking dish.

  4. Cover the rolls with plastic wrap and sit for 1 hour.

  5. Preheat oven to 350°F. Remove the rolls from the refrigerator, when preheating, and let them warm up to room temperature, remove plastic wrap. Bake for 32 minutes, or until they are golden brown.Do not over bake!!! Make sure they are a light golden color.


Frosting-

  1. In a stand mixer, mix the melted butter and softened cream cheese until mostly smooth.

  2. Add powdered sugar.

  3. Pour over warm rolls and serve.


Notes:

-Substitute blueberries for any other fruit or chocolate chips
